Zippy Feta Dip

In the spring I especially love digging into tender artichoke leaves. It’s an experience unlike any other and I usually can’t decide between a garlicky mayo dip or a more buttery one flavored with herbs. That was when this Zippy Feta Dip was born. It’s incredibly lemony with salty feta, and still creamy by using a little milk and mayonnaise.
I also love how simple it is to pull together. Just dump everything in a small blender or food processor and you are done! I feel that this is enough dip to serve four people. But you could absolutely double the recipe and serve it to more people very easily.
Leftovers of this would be awesome as a salad dressing, dip for grilled chicken, or you could add more chunky feta and make it an actual thick dip to serve with pita chips. It’s incredibly versatile and incredibly delicious.

Making artichokes is really very easy. The most complicated part is being able to tell when they are fully tender and cooked. Just leave yourself enough time to cook them and you won’t have any issues. Here’s how to prepare them.
First, cut about 1 inch or so off the stems.
Then pull the small leaves off from around the base. They are woody and tough, not anything you want to eat.
Using a knife (like this Wusthof ) cut the top 1/4 off of the artichoke.
Then using kitchen shears (my favorite are these pull apart Wusthof ones) trim the top 1/4 of the remaining leaves to get rid of that little prickly part.
Then put the artichokes, stem down in a large pot or dutch oven. Fill the pot with water, so that it comes 1/4 of the way up the artichokes. Add in 1 cut lemon to the pot. Bring the water to a simmer. Cover the pot with a tight fitting lid and simmer the artichokes for about 1 hour or until the leaves pull very easily out of the artichoke. Add more water if necessary.

Zippy Feta DIp
Ingredients
- Juice of 1 lemon about 1 tbsp
- zest of 1 lemon about 1 1/2 tsp
- 1/2 tsp garlic powder
- 4 oz or 1/2 C crumbled feta
- 1/4 C 2% milk
- 1/4 C light mayo
Instructions
- Combine all ingredients in a small blender or food processor and process until smooth. About 1 minute. Serve.
