Roasted Garlic Broccoli

Garlic Roasted Broccoli, I absolutely love making my broccoli this way. It’s a must for our family and such a simple way to make broccoli taste even more delicious that it already does when roasted.

Do you roast your broccoli? If not you should be. Roasting this delicious green veggie brings out such an incredible flavor, not to mention it keeps your kitchen from getting steamy by a boiling pot of water. Also by not boiling the broccoli you are ensuring you get all of the nutrients out of the vegetable and not melting them away into the water.

I like to toss mine with olive oil and roast in the oven, then when it’s all good and ready to eat, I toss it with a melted butter, garlic combo. Oh my! Every single time I serve this I get asked how I did it. I have never had so many people ask me about a single dish. Now you can get asked too! Please please give this simple side dish a try! You can thank me later.

Ingredients

  • 4-5 crowns broccoli
  • 2 tbsp olive oil
  • tbsp unsalted butter
  • 1/2 tsp garlic powder
  • 1/4 tsp kosher salt

Instructions

  • Heat the oven to 375 degrees.
  • Cut the broccoli stems off the stalk and place on a large rimmed baking sheet. Toss with the olive oil and salt and pepper to taste. Place in the oven and roast for about 25 minutes.
  • Stir the broccoli occasionally as it cooks. You are looking for some of the stems to be nice a browned and for the broccoli to be just soft. Test with a fork if you need to. Once the broccoli is done, pull it out of the oven.
  • Melt the 2 tbsp butter in the microwave or on the stovetop. Add in the ¼ tsp kosher salt and ½ tsp garlic powder.
  • Mix and then spoon over the cooked broccoli. Transfer to a serving dish.
