Instant Pot Lentil Tacos

Lentil Tacos are so delicious and really easy to make. They come together quickly with an Instant Pot but also making them on the stovetop doesn’t require much time. If you are looking for a healthy alternative to meat on Taco Tuesday then look no further. Somehow the lentils lend themselves to the taco seasoning and they really take on the flavor.

It doesn’t hurt that the lentils look a lot like ground beef and can be mistaken for ground beef in dark lighting. Haha. I was honestly surprised and impressed with how delicious they were.

Lentils cooked in the Instant Pot take no time at all. This is a true dump and cook recipe. You put the lentils, spices, and broth into the instant pot, bring it to pressure and cook for 15 minutes. Release the pressure manually. And when the hissing stops you can take the lid off and serve warm with your favorite taco toppings and tortillas.

You can use this to make nachos as well. I loved topping my Lentil Tacos with fresh creamy avocado, cool sour cream, and sharp cheddar cheese. My kiddos love flour tortillas so that is our favorite but corn tortillas would work well too.

Lentil Tacos

Vegetarian Lentil Tacos cooked in an instant pot or on the stovetop are a hearty way to enjoy your favorite Mexican cuisine.

Ingredients
  

  • 2 cups green lentils dry
  • 4 cups vegetable stock
  • 1 tsp kosher salt (morton's)
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions
 

For the Instant Pot

  • In the instant pot combine the lentils, vegetable stock and spices.
    Put the lid on the pot and make sure it is sealed.
    Push the button for Pressure Cook and set the timer to 15 minutes.
    Once the pressure cooking is done turn the knob from Sealing to Venting to depressurize the pot quickly. Once the pot stops hissing you can remove the lid and stir the lentil filling. Then put on your tortillas and serve with your favorite toppings.

For the Stovetop

  • Combine lentils, seasonings, and vegetable stock in a medium sized pot or dutch oven. Bring to a boil, then reduce to a simmer and cook uncovered for 20 to 30 minutes, it will be very thick. Spoon onto your tortillas and top with your favorite taco toppings.
