Lentil Tacos
Vegetarian Lentil Tacos cooked in an instant pot or on the stovetop are a hearty way to enjoy your favorite Mexican cuisine.

- 2 cups green lentils dry
- 4 cups vegetable stock
- 1 tsp kosher salt (morton's)
- 2 tsp cumin
- 2 tsp chili powder
- 2 tsp smoked paprika
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp onion powder
For the Instant Pot
In the instant pot combine the lentils, vegetable stock and spices. Put the lid on the pot and make sure it is sealed.Push the button for Pressure Cook and set the timer to 15 minutes. Once the pressure cooking is done turn the knob from Sealing to Venting to depressurize the pot quickly. Once the pot stops hissing you can remove the lid and stir the lentil filling. Then put on your tortillas and serve with your favorite toppings.
For the Stovetop
Combine lentils, seasonings, and vegetable stock in a medium sized pot or dutch oven. Bring to a boil, then reduce to a simmer and cook uncovered for 20 to 30 minutes, it will be very thick. Spoon onto your tortillas and top with your favorite taco toppings.
