Heat a large non stick or cast iron skillet over medium heat on the stove. Add 1 tbsp olive oil. Once hot and shimmering, add in the diced yellow onion and cook until it is translucent and soft. About five minutes.
Add in the garlic and cook until fragrant about thirty seconds. Pull off the heat and allow to cool slightly.
In a medium bowl combine the raw turkey, parsley, egg, breadcrumbs, and Parmesan. Add in 1 tsp salt, and 1/2 tsp black pepper. Toss in the onion/garlic mixture and combine with your hands.
Shape the mixture into patties and put them on a plate.
Heat the skillet over medium heat again with the additional tbsp olive oil. Once hot and shimmering place the patties in the skillet. Cook until browned on both sides. About 6 minutes per side.
