Easy & Delicious Quinoa

Cooking the quinoa in broth helps elevate the flavor and make it savory and delicious. It will become the star side of dinner.

Ingredients
  

  • 2 c beef broth
  • 2 shallots, diced
  • 4 cloves garlic
  • 1 tbsp butter
  • 1 c quinoa
  • 1/2 tsp kosher salt
  • 1/4 tsp pepper

Instructions
 

  • In a small saucepan over medium heat, melt the butter.
  • Once melted add in the shallot and cook for three to five minutes or until it begins to softern. Add in the garlic and cook for an additional minute.
  • Add in the salt and pepper. Then pour in the broth. Bring to a boil.
  • Once boiling add in the quinoa. Turn the heat down to low and simmer, covered, for 15 minutes. Remove from the heat and fluff with a fork. Serve warm.
