Pimento Cheese Roasted Cauliflower Steaks
Isn’t that the most beautiful thing you have ever seen? Pimento Cheese Roasted Cauliflower Steaks are one of my new favorite dishes. Not only are the SO easy to make but the flavor is delicious. It makes enough for everyone to have as a side to main dish, or for two people to have for a dinner.
Cauliflower is really having a moment right now. It’s incredibly versatile and actually pretty bland in flavor. Like a potato it really lends itself to an incredible variety of dishes because it mimics the taste of anything you put on it.
Pimento Cheese Roasted Cauliflower Steaks are a great way to use a head of cauliflower. I had one I needed to use in the fridge but was over ricing it and roasting it. Then I spotted some pimento cheese I had lying around and thought why not? After the first time of making these I’ve made them SEVERAL times since. We don’t need to count.
Any store bought pimento cheese will do. No need to make homemade, but feel free to use whatever you want. The pimento cheese is the main flavor component here so make sure to use one you LOVE. My favorite is Pawley’s Island Pimento Cheese. If you are looking for a homemade recipe to use I adore this one from Garden and Gun Magazine : https://gardenandgun.com/recipe/pimento-cheese-spread-the-love/
I hope you enjoy these as much as I do right now!
Pimento Cheese Roasted Cauliflower Steaks
Ingredients
- 1 head of cauliflower
- extra virgin olive oil
- kosher salt
- black pepper
- 12 oz pimento cheese (about 1.5 Cups)
- minced parsley or chives (for garnish)
Instructions
- Preheat an oven to 425 degrees. Line a roasting pan with parchment paper. Trim the green leaves off of the bottom of the cauliflower. Then using a knife cut the cauliflower into large steaks. Start at the top of the head and cut through to the stem side of the cauliflower. Lay these "steaks" on the roasting pan. I generally get about 4-5 steaks from each head of cauliflower. Drizzle the cauliflower with olive oil and sprinkle with salt and pepper. Roast the cauliflower for 15 minutes. Pull the cauliflower out of the oven and divide the pimento cheese onto the cauliflower steaks. Spread it around to evenly coat the steaks. Place the cauliflower back in the oven and roast for 15 minutes more. If you need some more browning on the top, then turn on the broiler for 3-5 minutes to let the cheese bubble a bit. Sprinkle with chopped parsley leaves or minced chives for garnish.
