Indian Simmer Chicken
Slow Cooker Indian Simmer Chicken is a super easy way to get a delicious meal on the table during the week. I love putting this in my slow cooker but you can do it on the stovetop too. I’ve included instructions for both in the recipe below.
Indian food is some of my favorite food out there. The flavors can be so complex and yet still so comforting. I love the spice and heat, this one is tamed down and not spicy at all since my kids are funny about spicy food.
I usually serve this Slow Cooker Indian Simmer Chicken over rice and garnish with fresh cilantro leaves. Of course warm Naan is on the side to sop up all the juice from the chicken. You can find Naan in the bread section at most grocery stores. It’s also at Sam’s and Costco and sometimes I find it near pita bread. I’ve almost had a hard time finding pita bread over Naan, that’s how mainstream it is now.

Indian Simmer Chicken
Ingredients
- 1.5 lbs boneless, skinless chicken breasts diced into 1" chunks
- 1 14.5 oz can diced tomatoes with their juices
- 1 13.5 oz can coconut milk
- 2 tsp garam masala
- 1.5 tsp kosher salt (I use Morton's)
- 1" piece fresh ginger minced
- 2 cloves garlic minced
- 2 tbsp fresh cilantro
Instructions
Slow Cooker Instructions:
- Combine the chicken, can of diced tomatoes with their juices, coconut milk, garam masala, salt,ginger, and garlic into the slow cooker. Stir together, then put the lid on and Cook on low 6 hours or high 3 hours. Afterwards sprinkle in the fresh cilantro leaves and mix. Serve over cooked white rice with Naan on the side and garnish with cilantro leaves if desired.
Stovetop Instructions:
- Saute the chicken in a saute pan or dutch oven over medium heat with a little olive oil until cooked through. About 10 minutes. Add the garlic and ginger to the pan along with the garam masala, salt, coconut milk and tomatoes. Stir together then simmer, covered, for 40 minutes. Remove the lid and sprinkle in the cilantro. Mix well. Serve over cooked rice with Naan on the side and garnish with cilantro leaves.
