Indian Simmer Chicken

A delicious Indian inspired dish you can serve in your slow cooker to help serve dinner on a busy weeknight.

Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts diced into 1" chunks
  • 1 14.5 oz can diced tomatoes with their juices
  • 1 13.5 oz can coconut milk
  • 2 tsp garam masala
  • 1.5 tsp kosher salt (I use Morton's)
  • 1" piece fresh ginger minced
  • 2 cloves garlic minced
  • 2 tbsp fresh cilantro

Instructions
 

Slow Cooker Instructions:

  • Combine the chicken, can of diced tomatoes with their juices, coconut milk, garam masala, salt,ginger, and garlic into the slow cooker. Stir together, then put the lid on and Cook on low 6 hours or high 3 hours. Afterwards sprinkle in the fresh cilantro leaves and mix. Serve over cooked white rice with Naan on the side and garnish with cilantro leaves if desired.

Stovetop Instructions:

  • Saute the chicken in a saute pan or dutch oven over medium heat with a little olive oil until cooked through. About 10 minutes. Add the garlic and ginger to the pan along with the garam masala, salt, coconut milk and tomatoes. Stir together then simmer, covered, for 40 minutes. Remove the lid and sprinkle in the cilantro. Mix well. Serve over cooked rice with Naan on the side and garnish with cilantro leaves.
