Pimento Cheese Roasted Cauliflower Steaks

Delicious pimento cheese gets melted and broiled on top of tender cauliflower steaks for a truly satisfying side dish or vegetarian main entree.

Ingredients
  

  • 1 head of cauliflower
  • extra virgin olive oil
  • kosher salt
  • black pepper
  • 12 oz pimento cheese (about 1.5 Cups)
  • minced parsley or chives (for garnish)

Instructions
 

  • Preheat an oven to 425 degrees. Line a roasting pan with parchment paper.
    Trim the green leaves off of the bottom of the cauliflower. Then using a knife cut the cauliflower into large steaks. Start at the top of the head and cut through to the stem side of the cauliflower. Lay these "steaks" on the roasting pan. I generally get about 4-5 steaks from each head of cauliflower.
    Drizzle the cauliflower with olive oil and sprinkle with salt and pepper.
    Roast the cauliflower for 15 minutes.
    Pull the cauliflower out of the oven and divide the pimento cheese onto the cauliflower steaks. Spread it around to evenly coat the steaks.
    Place the cauliflower back in the oven and roast for 15 minutes more. If you need some more browning on the top, then turn on the broiler for 3-5 minutes to let the cheese bubble a bit. Sprinkle with chopped parsley leaves or minced chives for garnish.
