Tiramisu Layer Cake

No Bake Tiramisu Layer Cake

A delicious blend of chocolate graham crackers, cool coffee flavored whipped cream, and chocolate covered espresso beans. This dessert looks like it took so much longer than it actualy does.

Ingredients
  

  • 2 cups heavy whipping cream
  • 3 tsp instant coffee
  • 1 cup powdered sugar
  • 3 tbsp cocoa powder, divided
  • 8 oz room temperature mascarpone cheese
  • 15 chocolate graham crackers
  • 1/4 cup dark chocolate covered espresso beans, chopped

Instructions
 

  • In a large bowl pour in the heavy whipping cream. Sprinkle the instant coffee over the top and allow it to sit for five minutes. The coffee will dissolve slightly. 
    After five minutes using a handheld mixer with the whisk attachment, whisk the cream until it begins to thicken. 
    Sprinkle in the powdered sugar and continue to mix until well blended. Add in  2 tbsp cocoa powder. Mix until stiff. 
    Gently fold in the mascarpone cheese with a spatula until it is all blended in. 
    In a 8"x11" casserole dish (you can use an 8" x8" as well you will just have thicker cream layers), layer five chocolate graham crackers on the bottom of the dish. Breaking some as needed to fit. Spread 1/3 of your cream mixture over the graham cracker layer and continue until you have three layers of cream and three layers of graham crackers. 
    Sift the reserved 1 tbsp cocoa powder over the top and sprinkle on the chopped chocolate covered espresso beans. 
    Chill for four hours and then serve. Keep in the fridge covered.
