No Boil Spinach Artichoke Penne

No pre boiling noodles here! Everything bakes together in the oven for a delicious, hands off meal.

Ingredients
  

  • 1 lb penne (can substitute Gluten Free, I've used brown rice penne such as Jovial)
  • 8 oz cream cheese softened
  • 3 c chicken stock
  • 2 c shredded mozzarella cheese divided
  • 1/2 c grated parmesan cheese
  • 14 oz can artichoke hearts drained & chopped
  • 2.5 oz fresh spinach leaves about half a bag
  • 3 c shredded cooked rotisserie chicken
  • 1 tsp kosher salt Morton's
  • 1/2 tsp garlic powder

Instructions
 

  • Preheat oven to 400 degrees. 
    In a large bowl combine the penne, cream cheese, chicken stock, 1 1/2 c mozzarella cheese, parmesan cheese, artichoke hearts, spinach leaves, rotisserie chicken, salt and garlic powder. Stir well to combine and put into a 13" x 9" casserole dish. 
    Cover tightly with aluminum foil and bake for 50 minutes. Stirring halfway through. 
    Uncover, sprinkle with the remaining 1/2 C mozzarella cheese and continue to bake uncovered for 10 more minutes. 
    Serve warm.
